Sounds like you had a good ol Wisconsin visit!
Glad you avoided the WI shaped stuff. But aged cheddar, and white cheddar are a good start.

Beer and Brats and Cheese, these would be the Milwaukee highlights, There is a large German population, but Milwaukee boasts a strong multi-ethnic population, and lots of good food. Plus it’s 90 minutes to Madison and 2.5 hours from Chicago.

If the conference schedules itself there again, you should definitely go; conferences with the power to determine their own schedule must be heeded.

How come I didn’t see the cheese stress squeezy? Hmm? Did you secret it away to your office lair?

AFS, huh? Was it the combined Ethnomusicology/AFS conference? Speaking of Wis cheese, a Wis.-based print vendor at the NYC conference I just attended was offering cheese curds at his booth (as an enticement to stop by?!) I tasted one. Not bad, like mild, wussy Wis. cheddar cheese, just shaped like a big curd (!) instead of a cube. I guess they see an unfilled niche in the cheese market…ST

Kurds seemed to be big in Wisconsin this time around. I rejected them as too soft looking. Wussy is exactly right.
